Sodium Metabisulphite (Na₂S₂O₅) is a white to yellowish crystalline powder or granules. It typically has purity in the range of 95–99 %. It releases sulfur dioxide upon dissolution and decomposes under acidic conditions. It is soluble in water (about 430 g/L at 20 °C) and acts as a reducing agent and preservative / antioxidant.
Sodium metabisulphite acts as a strong antioxidant, anti‑microbial, bleaching agent, dechlorinator, and reducing agent. The active species is SO₂ / bisulfite ions, which can scavenge oxygen, inhibit enzymatic browning, and act as a sterilant.
