Citric Acid Anhydrous is the water‑free form of citric acid. It is a white crystalline powder, typically with purity ≥ 99.5%. Because it has no water of crystallization, its anhydrous form allows for higher acid strength per weight, and more compact formulation. It melts around 153–155 °C.
Because it is anhydrous, every gram carries full acidity, which is beneficial where moisture must be minimized. It can act as acidulant, chelator, buffer, and flavoring agent, similar to the monohydrate form, but more efficient in dry formulations.
